Wheat Beer - Witbier / Blanche
This traditional witbier is a passion project for our staff. We collaborated with our friends at Valley Malt (MA) to produce 'wind' malt (also known as 'air-dried' malt) for Adem--a traditional, very light malt that was historically dried in the lofts of Belgian barns, absent any kiln, and used for witbier production. Notes of orange peel, peppercorns and floral hay meld with the wheat-forward base to provide a taste that hearkens back to witbier's origins.

Pilsner - Czech
Crisp, clean and sessionable, with a firm but rounded hop backbone, Alexandr is the first and original Czech-style pilsner crafted at Schilling. Authentic raw materials shine, and so will almost any beer-friendly food paired with this Czech-inspired lager.

IPA - American
Our newest IPA, Crawford, is named after the famous Notch here in the White Mountains. Hopped with HBC-586, HBC-630, and Galaxy for notes of fresh papaya juice, orange zest, and tangerine pith, with a smooth mouthfeel and finish.

Fall of Song

IPA - Imperial / Double
Our newest DIPA, Fall of Song features honey from our friends at White Mountain Apiary located right here in Littleton. Hopped with Taulus, Cashmere and Simcoe hops for an expressive hop journey, notes of freshly grated orange zest, pink grapefruit and melon abound. The finish tastes like a walk in the woods.

Kampa 11°

Lager - Dark
Inspired by the rich and malt forward Czech Dark from U Fleků in Prague, our take exhibits notes of brown bread, toffee, and cocoa dusted almonds. Finishes smooth with a touch of oak from time spent in our American Oak Foeder.

Poppy's Moonship With Passionfruit And Lime

Sour - Fruited Gose
Tailored to the summer's warmest days, this traditional Gose base, fermented with our house culture, showcases bright tropical passionfruit notes up front, with lime zest and juice character on the finish. The tart wheat base and gentle salinity provides a beautiful canvas for summer flavors.

Wild Ale - American
Brewed during last year’s Oktoberfest with our friends at Almanac, Rhus is a mixed culture saison that was steeped on Staghorn sumac harvested from the banks of the Ammonoosuc river behind our brewery. Fresh grated lemon zest, ripe citrus, mild funkiness on the nose. Subtly tart and effervescent with a refreshing finish.

Wheat Beer - Hefeweizen
Schlaumeier (“smart aleck”) is a flavorful straw-colored Bavarian specialty wheat ale. Yeast-driven notes of banana and clove define this traditional delicacy.

Tennō Dry

Lager - Japanese Rice
Tenno Dry is our take on the Japanese Rice Lager. A strikingly pale color, this highly attenuated lager features puffed Jasmine rice and Sorachi Ace hops. Dry, thirst quenching, with mild rice sweetness and hoppy notes of lemon verbena and citrus peel.

Store &
Tasting Room

Our Scandinavian farmhouse-inspired Store & Tasting Room was built in 2017-2018 to serve as our brewery’s flagship retail experience. This is where new beers are released, hard-to-find bottles and cans are available, and where brewery-only merchandise can be sourced. A limited number of draught pours are also available here. (Hint: the couch in front of the fireplace is magical in winter!)

Set only yards away from our 225 year-old pub, this modern building with soaring ceilings and ample glass was intentionally designed to reflect the tension between the classical beer styles and tasteful innovation that defines our brewery. Expansive decks with sweeping river views and a wood-burning fireplace provide an unparalleled sensory experience, bringing together our beer, the North Country’s rugged beauty, progressive design, and the warmth of friendship. Our food truck is often parked outside during the warmer months offering beer-friendly street food. Take away from our pub is also available for eating inside or on the deck.
