Our Pub & Kitchen’s menu centers on wood-fired pizzas hand-crafted by our culinary team. With a focus on local ingredients, many of our pies change with the season. Our menu also features fresh salads and wood-fired starters like pretzels with house-made sauces. Locally sourced gluten-friendly items are available. Our food truck menu includes hand-cut fries, smashburgers, poutine, and other street fare.

Pilsner - Czech
Crisp, clean and sessionable, with a firm but rounded hop backbone, Alexandr is the first and original Czech-style pilsner crafted at Schilling. Authentic raw materials shine, and so will almost any beer-friendly food paired with this Czech-inspired lager.

IPA - American
Citrus, strawberry and spruce notes fill the palate, Galaxy hops dominate in this American IPA.

Belgian Tripel
A dry, spicy, and complex Belgian-style ale inspired by Trappists. Aroma and flavor marked by the marriage of peppery spice, citrus, and pear. Noble hops assertively utilized to create balance.

Lager - Munich Dunkel
Named in honor of George A. Schilling, this is a double-decocted dark Bavarian-style lager. Rich, complex Munich malt takes center stage, presenting notes of nuttiness, bread, and undertones of caramel. Dry and sessionable.

Wheat Beer - Witbier / Blanche
Named after a small town in Belgium's Hoegaarden region, Hoksem is marked by gentle citrus peel and clove spice qualities on the nose, with notes of lemongrass, orange and light spice defining the palate. Brewed with unmalted wheat, orange peel and coriander, Hoksem pours straw yellow with a fluffy white head. Soft, refreshing and wheat-forward, Hoksem is crafted for early summer days on the river.

Konstantin is a rich, light-ruby colored seasonal lager. Double-decocted for complexity. Drier and lighter in color than most German-style Märzens, biscuit and bread-like malt note shine in the flavor and aroma.

Lager - Pale
Agrarian-style lager of Franconian origin brewed with spelt—and for the first time in North America, by Schilling’s brewers—with nearly extinct strain of lager yeast just revived from the cellars of Weihenstephan in Munich. Notes of strawberry, and hay abound with a hazelnut-like dry finish.

Maly 8°

Pilsner - Czech
Imagine you’re wandering the narrow streets of Prague after work and amble into your neighborhood pub to have a beer or two? Maly 8° is a riff on this style of enjoyment. This Czech-style 8° pils features a rounded bitterness and complex malt character for full flavor, but checks in at only 3.1% abv. We used New Zealand Saaz hop varietals to produce a brighter and subtly fruitier hop note to add a progressive twist.

Lager - Dark
Modernism is inspired by the Czech black lager tradition. Malt selection and a Bohemian inspired mash and hop schedule provide this beer with deep complexity.  Notes of dark malts, bittersweet chocolate and caramel dominate.  The finish is dry.

Palmovka 12˚

Pilsner - Czech
Brewed with all Czech-sourced ingredients, adhering to a traditional Czech mash and decoction schedule. Notes of baked bread dominate. Rounded bitterness with a silky mouthfeel.

Piwo Grodziskie

Grodziskie / Grätzer
Piwo Grodziskie is our interpretation of a centuries-old Polish tradition: smoked wheat beer. Showcasing oak-smoked wheat malts, Pivo Grodziskie features surprisingly delicate but ever-present smokey highlights; a singularly soft mouthfeel; a beautiful white foam cap; and a crisp, dry finish--products of almost two months of horizontal lagering and multiple (lager and German ale) yeast strains.

IPA - Imperial / Double
Huge waves of grass, pine and citrus coat the palate as the Simcoe, Mosaic and Galaxy hops do their work.

Popp's Moonship With Blackcurrants And Blackberry

Sour - Fruited Gose
Sessionable and effervescent, this is our progressive riff on a traditional Leipziger-style Gose (tart German-style wheat ale).  Notes of dark berries shine from the addition of rich, tart blackcurrants and blackberries, this summer treat features gentle salinity and looks beautiful in the glass.

Resurgence was brewed with our friends from Wheatland Spring. Using a portion of malt grown on the farm brewery this beer celebrates the Oktoberfest season. Light golden hue, bready malt character, floral hop character.

Wheat Beer - Hefeweizen
Schlaumeier (“smart aleck”) is a flavorful straw-colored Bavarian specialty wheat ale. Yeast-driven notes of banana and clove define this traditional delicacy.

Wet-Hopped Hanse

Kellerbier / Zwickelbier
Featuring fresh whole Triumph hops from the Hop Yard in Gorham, Maine, this special batch of our dry hopped Kellerpils delivers hop-forward notes of citrus peel and lemongrass combined with traditional herbal and spice character. Backed by a malt bill of 100% Pilsner malt and a German lager yeast strain for a light finish.


Our pub & kitchen menu features a number of specialty pizzas hand-crafted by our culinary team. With focus on local ingredients, our pizzas change depending on the season. Our menu also features different wood-fired items such as house-made pretzel twists, bratwurst, house-made hummus, and a range of salads.

We do not, owing to space limitations and concerns for your safety. However, you’re always welcome to stop in and look through the viewing windows at our Store & Tasting Room at our brewery operations.

Our beer hall on the second floor of our 18th-century brewery pub is an ideal venue to accommodate groups of up to 60 people. Decorated in a rustic-modern style with its own private beer bar and wide-plank farm tables, this space can be reserved for a fee and fully catered by our staff. Availability of these spaces varies with the season and pre-existing event reservations.
