Our Pub & Kitchen’s menu centers on wood-fired pizzas hand-crafted by our culinary team. With a focus on local ingredients, many of our pies change with the season. Crisp, clean and sessionable, with a firm but rounded hop backbone, Alexandr is the first and original Czech-style pilsner crafted at Schilling. Authentic raw materials shine, and so will almost any beer-friendly food paired with this Czech-inspired lager.

This pils uses one of our house yeast strains, specialty Adriatic malts, Hallertau Tradition and Tettnanger hops.  Floral, Citrus and cracker malt notes dominate the aroma, flavors of biscuit, cracker and melon mark the palate.

A medium-bodied, yet highly drinkable golden lager with gentle acidity traditionally brewed with an intentionally higher gravity and hop content for shipment out of country. Malt and hops are finely balanced resulting in an exceptionally quenching and clean profile.

Pilsner - New Zealand
Please welcome Clayton--our newest Pilsner! Featuring a distinctive New Zealand hop schedule, Clayton is full of Riwaka and Motueka hops from Clayton Hops (NZ). These provide striking notes of grapefruit, peach fuzz, lime, and kiwi. A fuller mouthfeel sets Clayton apart from many other dry hopped lagers, owing to the pilsner malt, pale 2-row, and malted wheat in its grist bill.

A style we greatly admire, the German Pils is a masterclass in balance. Utilizing a mix of Hallertau Mittelfruh and Saphir for that quintessential noble hop bent, Jakobus is supported by a cracker-like malt character. Light bitterness, lemon, and floral notes finish with a crisp, clean mouthfeel.

Pilsner - Czech / Bohemian
Imagine you’re wandering the narrow streets of Prague after work and amble into your neighborhood pub to have a beer or two? Maly 8° is a riff on this style of enjoyment. This Czech-style 8° pils features a rounded bitterness and complex malt character for full flavor, but checks in at only 3.1% abv. We used New Zealand Saaz hop varietals to produce a brighter and subtly fruitier hop note to add a progressive twist.

Pilsner - Czech / Bohemian
This limited edition variation on our original “Palmovka 12°” Pilsner pays tribute to the origins of the style and the rich tradition of Plzň by featuring two heirloom yeast strains, floor malted Czech Pilsner malt, and whole leaf Czech Saaz hops. Decocted, and boiled adhering to a Czech-style schedule and lagered extensively in one of our horizontal tanks. Notes of fresh baked bread and floral hops hold sway, and an expressive yeast character melds with light honey and hay on the palate. Palmovka Speciální has a soft mouthfeel with crisp carbonation that beckons for another sip. Na zdraví!

Our newest Baltic Porter pours a dark brown-to-black hue, showcasing an off-white head. Notes of baker's chocolate, toasted brown bread and hints of dark fruit touch the nose. Subtle roast, an earthy-nuttiness and caramel notes also touch the palate.

A modern interpretation of a nearly extinct lager originating from Kulmbach, Germany. Dark, hoppy, and strong, it features a modern continental hop combination of Ariana and Hallertau Blanc.

Double dry-hopped with Cascade, Citra, and Tangier hops. Evidently bitter with citrus and pine, backed by aromas of mango, tangerine, and red berries. An ode to the White Mountain cliffs of Mt. Webster.
