Please join Schilling Beer Co. and an amazing group of our industry friends to celebrate our 2023 Oktoberfest & 10th Anniversary. This event will take place on September 30 at our brewery in Littleton, NH. Online ticket sales will go live this Saturday morning (7/15) at 9am at https://schilling-beer.ticketleap.com/schilling-oktoberfest-2023/

There will also be a number of tickets available for our local community to purchase in-person at our Store & Tasting Room starting this Saturday at 11am opening.

We're pleased to welcome back Petřín 11°, our seasonal Polotmavý (Czech-style amber lager). Named after the famed tower in Prague and brewed with all Czech-sourced ingredients, Petřín 11° follows a traditional mash schedule and decoction process. Supremely drinkable, this copper-colored lager was developed as a lower gravity alternative to our Augustin 13°—one that maintains the traditional Polotmavý character that we love, yet with greater sessionability. Featuring aromas of lightly toasted bread, honeysuckle and light floral hoppiness, Petřín 11° showcases a panoply of malt-driven flavors including biscuit, honey and toasted almonds. Available this Friday in cans and on draught.

A couple weeks back we hosted our friends from @troutunlimited at the Dr. RJ Schilling Community Flyfishing Celebration. This event raised funds for TU's cold-water conservation programs and 'trout camp' for kids. We also invited a dozen North Country breweries to take over our tapwalls in support of the effort, and what a day it was!

Thanks to our fellow NH brewers and the North Country's craft beer community, we raised $2,000 for Trout Unlimited. Huge thanks to all who attended and made this special day possible!

Tenno Dry is our take on Japanese Rice Lager. A strikingly pale color, this highly attenuated lager features flaked rice and Sorachi Ace hops. Dry and thirst quenching, it showcases mild rice sweetness and hoppy notes of lemon verbena and citrus peel. Light bodied, this special once-annual release is tailored for the hot, humid days of high summer in New England.

We’re proud to announce the 2023 release of Piwo Grodziskie. This ancient Polish style showcases oak-smoked wheat malts as the main player (85% of the grist). Its mouthfeel is singularly soft, and its smokey highlights surprisingly delicate but ever-present.

This take on Grodziskie (“Grätzer” in German) was co-fermented with a neutral German ale yeast strain and a classic lager yeast; it then lagered for almost two months in horizontal tanks. The result is an oak-smoked Polish-style wheat beer with a soft mouthfeel and a dry, crisp finish with Triskel hops providing a lightly floral character. Gently hazy with a massive and pillowy white foam head, this beer celebrates the warm summer months.

Available this Friday in 500ml bottles as well as on draught.

It was terrific to spend time with our friends @foxfarmbeer last week. We brewed a unique Landbier together at their Salem, CT, brewery—another great chapter in our special relationship with the Fox Farm team.

Inspired by the blending methods of nineteenth-century Belgian and French brewers, we are pleased to announce the first release from our Ammonoosuc Room Series: Bière de Coupage. This series will celebrate and showcase Schilling's spontaneously fermented beers. These are naturally cooled and inoculated in our coolship, perched on the banks of the Ammonoosuc River, and carefully tended until ready for debut—a process typically marked by years, not months. Beyond the art, science and traditions that we celebrate using these time-honored fermentation and blending methods, the Ammonoosuc Room Series stands on one principle: to allow the unique microclimate surrounding our brewery to find its way into your glass.

In the case of Bière de Coupage, as with all Ammonoosuc Room beers, this blended wild ale has its own story. Its journey began on a cool night in April 2021, initially as a batch of turbid mashed wort exposed to the elements via the open windows in the Ammonoosuc Room. After inoculation in our coolship via naturally occurring microflora entering from the open windows, it was transferred to select barrels for fermentation and maturation—a journey that would last over two years.

After carefully monitoring its progress, our team selected a specific barrel from this 2021 batch of spontaneously fermented beer—ripe with notes of stone fruit, almonds and hay—and blended it with a young saison in March of 2023. After three months of bottle conditioning, Bière de Coupage's two-plus-year journey now comes to the best possible end: in your glass.

Presented in green 750ml corked and capped bottles, this beer pours a pale straw yellow with a faint white head. Pairing the bright acidity of the spontaneous beer with the funky earthiness of the young saison leaves the impression of peaches, lemons, and straw on the palate. 5.5% alcohol by volume.

Available for bottle service on campus and to-go pick-up beginning this Friday.

The multi-talented and all-around wood-fired oven champion Dustin Berwick is also celebrating Year 5! Known for cranking out exceptional pizzas, Dustin has delighted countless taste buds with his culinary skills. His passion and eye for detail have elevated our pizza game to new heights, and we're very proud of him. Cheers to five years of terrific work, Dustin!
