We`re excited to showcase a foeder-lagered edition of our original Czech-style dark lager, Modernism. The process of conditioning beers in our American Oak foeder lends them a unique softness, along with mellow notes of vanilla and oak. This batch of Modernism combines these foeder-derived characteristics with its trademark subtle roast quality, and hints of bittersweet chocolate and toasted walnuts. We`re excited to announce our annual release of The Grafton Metro, our take on the classic American lager. Pouring a beautiful golden hue with a white head, the light touch of maize in the grist dries on the finish, lending Grafton Metro the style`s trademark aroma and flavor. This past weekend was filled with friendship, collaboration and delicious beers from great friends across the industry and country.
First, a huge `thank you` to our friends at @theseedbeer for hosting us in Atlantic City to collaborate on a special lager. Amanda, Sean, Chris & Brandon—the time that we spent together was terrific. Thank you so much for your friendship and hospitality.
These folks are doing something truly special in AC and we are honored to brew with them!
We also had quite a time with our one-of-a-kind friends @humanrobotbeer. We attended one of our favorite annual events, Log Jammin’—an incredible weekend filled with great people, beer and hospitality in Philly. We can’t thank the Robot team enough, and look forward to returning the generosity this September in the North Country! Ken, Jake, Roller and the entire HR staff—hats off to you, and thank you for everything!
Last but certainly not least, it was a treat to hang with our good friend Kevin King (@kevinkingofthenorth) of @sarenecraftbeer. Thanks again for being a downright awesome person and a tremendous partner for Schilling! We’re proud to welcome back Isartor, a Bavarian-style Helles lager inspired by our time in Munich. Named after the ancient gate in the city, this traditional full-strength Helles pours a bright pale gold. Featuring a pleasant bready malt profile, Isartor finishes soft with a balanced, light honey character and a hint of floral hops. 5.2%. Available tomorrow on draft and in 4-packs to go.
We will also be tapping a gravity cask of Isartor tomorrow at our Store & Tasting Room. Cask taps at 12PM to commemorate the beginning of First Fridays here in Littleton. Prost! ...

This charity event supports Trout Unlimited, a 501(c)(3) non-profit organization, to help promote cold water conservation and community building through fly fishing, and to bring this terrific sport to children through TU’s Trout Camp for kids. Named after the Cozzens Family`s late grandfather—a surgeon, philanthropist, avid fly fisherman and mentor—this event celebrates the North Country, its waters, and the enriching sport of fly fishing.
Schilling will donate proceeds from guest beers (and select taps of our own) to Trout Unlimited, which will help fund their "Camp for Kids" and "Trout in the Classroom" programs. These programs provide children with hands-on education about wildlife conservation and the river ecosystems in New Hampshire. As avid fly fishermen ourselves, passing on a love for this sport and the cold water environment we cherish is our responsibility—just as our grandfather believed it was his.
Prior to opening our taps at 11:00 AM and pouring beers from across our region, Trout Unlimited will host a fly fishing challenge directly across the covered bridge from the brewery on the Ammonoosuc River. The link is in the bio if you`d like to sign up.

Trauben, our most recent American Wild Ale, embodies our appreciation for both traditional and progressive approaches to mixed-culture beers. Trauben began its journey as a blend of select mixed-fermentation saisons and wild ales prior to spending a year on Gewürztraminer wine grape must. Complex funk - developed over two years - is balanced by layers of white wine and lemon peel, and a bit of light acidity on the palate. Trauben finishes mostly dry with lingering lychee and gooseberry notes.
Available in 500ml bottles for enjoyment at the brewery or to take home, Trauben makes a picture-perfect companion to our R.J. Schilling slate of premium local cheeses. 5.5% abv. ...
We are happy to welcome back a summer time favorite from our Resilience line, Soft Wave. Soft Wave is an American Pale Ale developed around the hop varietals Paradigm and Bergamot, sourced from @puremittenhops in Coopersville, MI. Soft notes of orange sherbet, lychee, and honeydew melon blend with a touch of malt to round out the finish. Quintessential beer for June in the mountains. 4.8% abv. Available this Friday. ...
Despite summer`s rapid approach, we enjoyed what will likely be the last grasp of cold air during the middle of the week. This provided us a window to turn out a late-season turbid mash for the koelschip. Overnight, with snow flying, we captured microflora funneled down the river basin by the wind, through our open windows in the Ammonoosuc Room, and into the steaming wort. This is the start of a creeping journey for the liquid that will continue for years, resident in a panoply of barrels, ebbing its way towards a distant future life as spontaneous beer (if we are fortunate!).
As our wild program has matured, our emphasis on ensuring its sense of place has also grown. This year`s grist featured barley from Morrill Farms in Concord, NH; flaked barley from NEK Grains (Waterford, VT); and regional wheat malted by Valley Malt (Holyoke, MA). We`re grateful for these local partners and deeply appreciate their contributions to this and other Schilling creations! We also used aged whole-leaf Triumph hops from The Hop Yard (Gorham, ME) and barrels custom coopered by River Drive (Buxton, ME) to contribute to this one-of-a-kind beer.
Our forthcoming Ammonoosuc Room Series will showcase these years` long projects, all featuring spontaneously fermented beer. While it will be a long time before we release this particular batch, we`re excited to share blends of spontaneous batches from prior seasons in the very near future. We`re pleased to announce our 2023 release of San Jacinto Especial, our Mexican-Style Golden Lager. Deep gold-colored with a white head, San Jacinto Especial’s aromas and flavors showcase notes of sweet corn, subtle hay and cracker, with a touch of herbal hop character. Light malt sweetness touches the palate, driven by the addition of flaked maize. The finish is dry with just a hint of bitterness—perfectly refreshing at 5% abv. ...
We are so grateful to have been able to spend time this past week with a number of amazing friends—old and new—in Tennessee!
First, we’d like to thank our good friends @blackberryfarmbrewery, who hosted us at the incomparable @spicyboysnashville crawfish boil in Nashville, and following that, up in Maryville at their beautiful brewery for a tap event and first-class fellowship. The hospitality shown to us from Roy, Matty, Davis, Tim, Seth and their entire onsite team was nothing short of spectacular. We look forward to returning the love when y’all come to the North Country. Thank you, friends!
Second, we’d like to thank @barriquebrewing for inviting us to their "Slow & Low" lager event and their "Mixed Ferm Mixer." The turnout was amazing, and we enjoyed hanging with too many friends at the brewery to name, sampling some FINE wares! The inclusion of DJ Matty H. was icing on the cake.

Maly 8°, our Czech-style Session pilsner, celebrates Prague`s beer hall (pivnice) culture. This 3.1% abv lager features floor-malted Moravian pilsner malts for a traditional, delicate character, and Czech Saaz and Bohemie hops for balance. The result is an imminently sessionable, subtly spicy, floral and bright lager. Na zdraví! ...
Jakobus (5% abv) bears the Schilling standard as our German-style pilsner. It leans on Hallertau Mittelfrüh and Saphir for its quintessential Noble hop character, balanced by a nuanced, cracker-like malt profile. Floral and subtle lemon notes accompanied by a light bitterness guide Jakobus` finish to a crisp, clean conclusion, readying you for another sip.
Jakobus is fermented with our revived Franconian lager yeast strain, piloted for the first time in North America here at Schilling following its rediscovery in the cellars of Munich`s ancient Weihenstephan brewery.

It’s Maibock time! Ziegenmensch is a strong golden lager, rich with complex Munich malt flavors from the decoction process. The finish is crisp and clean. Slight alcohol warming is present. We`ll be pouring in our Store (black building) all week, but our pub and pizza kitchen will be closed for continuing renovations from Monday, May 1, through 3PM Friday, May 5. We need to get ready for summer, and that means redoing our floors and taking care of some other pressing maintenance requirements.

Today we proudly celebrate the release of Morrillbräu, a New Hampshire Landbier crafted with nearly 100% local barley grown an hour south of our brewery at @morrillfarm (Concord, NH). This barley was subsequently malted by @valleymalt at their hydro-powered facility in Holyoke, MA.
Morrillbräu (5.5% abv) is a delicate pale lager designed to showcase this specialty local malt. A gentle floral aroma from the German Noble hop Spalt gives way to a subtle cracker-like malt character on the palate. With a light body, our New Hampshire Landbier finishes dry with a faint spice note from the hops.
Four square feet of grain from Morrill Farm went into each pint of Morrillbräu. The use of local grain supports the farms and families in our region that provide Schilling and other local brewers, distillers and bakers with high quality grains. As a member of the @northeastgrains alliance and as a symbol of our support of local agricultural, we now proudly display the Alliance`s `square foot project` logo on this and other Schilling cans.

Komet is a dry hopped lager featuring poignant hop expression boldly delivered from Crosby Hop`s latest advancement in concentrated hops, CGX.
Working with the @crosbyhops team, we selected their Estate Grown Comet hops and paired these with Hersbrucker, a traditional German varietal, to compliment the more fruit forward Comet. The result, Komet, is a delicious and unique dry hopped lager—a beer bursting with flavors delivered with an exclamation point.
Lemongrass, melon and citrus dominate Komet`s flavor profile, opening increasingly as the beer hits the glass. An amalgam of papaya, orange, green tea and subtle earth tones round out the flavor. This complex hop expression is backed by a cracker-like malt character, with subtle notes of bread and honey leading to a crisp, refreshing finish. The alcohol by volume is 5.5%.

To say that we`ve had quite a week visiting our industry colleagues and partners is an understatement.
From the moment that we hit Atlanta to unveil our Maibock collaboration (@eggenbergerbier) at the world-class @brickstorepub, we were surrounded by unmatched hospitality. Dave, Neil and team always treat us like family. To be able to hang with our industry friends that night made it even sweeter. Thank you to everyone who took time to join us in Decatur, and to the Stöhr family, who travelled from Austria. To our good friends @halfwaycrooksbeer, Shawn and Joran—thank you as well for your friendship and hospitality!
The outrageous hospitality extended north to Good Word Brewing’s unrivaled Little Beer Festival in Duluth, GA—a master class in friendship and session beer—and to the gracious provision of Todd and his team @goodwordbrewing. What a display of friendship and excellence! Y`all are family, and we`re forever grateful to be included in Good Word`s signature event.
We felt much the same at Richmond`s @triplecrossing, where we were honored to collaborate on a smoked Bockbier, and at @harrysdowntownfxbg in Fredericksburg, VA, where we enjoyed provisions and fellowship with Trevor and Justin from our @alliedcraftdistro fam. Thank you all so much for the time, warm welcomes and friendship!
Finally arriving in Northern VA, we were treated to an epic day of lagerbier crafted by the Branding Family @wheatlandspring using heritage barley from their estate. The authenticity and quality of this place and experience was singular—as was the conviviality of that evening, which we spent welcoming the Eggenberg team with John and a few select guests of Wheatland Spring, including our dear friend Jinson, owner of @highsideva (Fairfax, VA).
Our travels concluded with "fermentation fellowship" and toasts at NRG’s @shelterbeerdc at the Roost in Washington, DC. What a spot, with exceptionally well-curated draught and bottle lists and outstanding culinary options. Special thanks to Greg, Bruno and team for making us feel so welcome, and for supporting our brewery so strongly. We`re honored! ...
