Blend No. 1 is a blend of 1-, 2-, and 3-year aged spontaneously fermented beers. Each blend rested overnight in our coolship, open to the microflora blown in from the Ammonoosuc through the windows. Transferred to a variety of barrels and century-old puncheons, the blends transformed over the ensuing months and years prior to blending. Pale golden in color, with lemon, pear, and funky aromas on the nose. With mild acidity and notes of hay and light apple hit on the palate.
