Rye saison, traditionally cooled in our coolship and fermented in our Italian Barolo foudre, originally using mixed-cultures from Schilling Beer Co. and Free Will Brewing (PA). Tart with pronounced hay, citrus and gentle earthy funk characters, it finishes with soft tannins from the wood.
